How to shuck an oyster

Using the 5 simple steps technique of how to shuck an oyster, you can start organizing parties at home, in the park for the summer and during holidays. Organize a Girls Night with Martinis & Oysters, surprise your loved one with freshly shucked oysters and a bottle of wine when they arrive home, or bring some oysters to the beach/park and share them with friends.

Step One

Before we start. Take a Dutch Towel, fold it a couple of times and put it on top of your non-dominant hand. Our Oysters XO shucker has 2 fingerprint fittings for your thumb and index finger. It gives you some leverage without using strength. Put the oyster cup side down and with the hinge pointing to you in the palm of your toweled hand. Wrap your fingers around the oyster and put your thumb on top of the flat shell to hold it in place. 

Let’s start with Step 1 of How to Shuck an Oyster: The Lollipop. Put the point of the shucker into the hinge. Pull your toweled hand towards yourself and push the shucker hand gently away from you, deeper into the hinge. Jiggle the shucker left and right (NO turning). Try not to use strength because the shucker will slip out. Pull, push and jiggle until you have a LOLLIPOP. You have a lollipop when the shucker is nicely stuck in the hinge. You can even knock the lollipop on the counter and it stays on the shucker.

Step Two

This is Step 2 of How to Shuck an Oyster: Pop the hinge.
We pop the hinge by turning the shucker like a key in a lock. Left and Right. Make sure you keep the oyster tight in your hand and keep pressure on the shucker but still don’t use any strength.
If the oyster doesn’t pop open, Push the shucker a bit deeper, getting back to a sturdy lollipop, and try step 2 by turning left and right again. The hinge should POP right open.

Step Three

This is Step 3 of How to Shuck an Oyster: Cut the top shell.
Oysters have 2 muscles: The Top and Bottom muscles. From the hinge, they are 2/3 up and a little to the right. Push the shucker into the hinge, keeping the point of the shucker scraping against the under of the top shell.
Feel where the muscle is and windshield wipe the shucker to the right to cut the muscle.
Pick the shell up with your shucker thumb.

Step Four

This is Step 4 of How to Shuck an Oyster: Cut the bottom muscle.
Turn your non-dominant hand into your body. This way the muscle ends up right in front of you. Do you see it? Knowing where the muscle is, makes cutting the muscle easier. Scoop the shucker underneath the oyster away from yourself and cut the bottom muscle by scraping the shucker against the shell

Step Five

This is Step 5 of How to Shuck an Oyster: Clean & Presentation.
Push the oyster out of the hinge and see if there is any debris you should take out with shucker or finger.
