Do you prefer sweet or savory? Some oysters have a higher level of oyster “fat” or “butteriness” which masks the brine and causes them to be sweeter than others. Most “sweet” oysters still have a hint of savory like a salty filling of a peanut butter cup.

Meat

Plump

Oysters range between lean and plump like cuts of steak. Some oyster species naturally grow deeper cups with meat that is plump and fatty (the healthy kind!) comparable to a ribeye cut. Other oysters grow flatter cups with meat that is leaner and crisper similar to a filet mignon.

Grow-out Method: Combined Australian and French farming techniques – Grown primarily on 300-foot suspended longline

Description: The Duke is Royalty amongst oysters. They endure a rigorous dry and tumble schedule to develop a thick, clean shell and large adductor muscle. The tides groom these oysters to perfection before they are sorted by hand and purged with the raw seawater to ensure peak quality. The Dukes of Topsail Sound are extremely salty with a sweet taste and firm texture finished with complex flavors of long leaf pine forests that extend from neighboring Holly Shelter Game-lands to the Blue Ridge Mountains.
