Grow-out Method: Tide tumbled bags suspended by buoys
Description: Chelsea Farms is well-known both for their “Chelsea Gem” oysters and as the original developer of the tide tumbled growing method. Their oysters are grown in bags connected to a rack above the beach on one side and a buoy in the southern Puget Sound intertidal waters on the other. The tidal cycle moves the buoy up and down, naturally tumbling the oysters in the bags. This suspended culture method creates a completely new flavor profile that is clean, sweet, buttery, with a delicate touch of brine.
